A5 WAGYU OMAKASE IN ORCHARD HAS BEEF SASHIMI, “2 SECOND” SHABU SHABU & WAGYU CHAWANMUSHI!

You’re probably familiar with luxe sushi omakases in Singapore featuring premium seafood and sashimi, but have you ever seen a wagyu beef-centric omakase course? We discovered Mizuki’s newly-launched Wagyu Omakase, and being serious beef lovers, our interest was definitely piqued so we simply had to go and try it for ourselves. 

Mizuki is conveniently located in the heart of Orchard, tucked away in Ngee Ann City, and the interior feels especially intimate and cosy. The dining counters are split into 2 rooms accommodating not more than 10 persons each, and the rooms are separated by wooden partitions and a narrow walkway—we felt like we were entering some private dining enclave of sorts.

3 Kinds Seasonal Sashimi

Sirloin Sashimi

There’s only one 8-course Wagyu Omakase ($238++ per person) served at Mizuki for both lunch and dinner, and we’re told that all the wagyu featured in the course is Hokkaido A5 wagyu. After starting off with a comforting Wagyu Consommé, we were served a trio of seasonal sashimi, but unlike the usual selection of fish, they also included Sirloin Sashimi, sliced to a precise 2mm thickness, topped with Bafun uni and caviar. We’re not the biggest fans of raw beef, but we can’t deny that the beef sashimi was pretty palatable: the entire bite was tender and sweet, with a texture similar to regular sashimi, and not a hint of gaminess, which was definitely a plus.

Chawanmushi with Diced Wagyu

Kobachi with Wagyu Tartare & Shiro Ebi

The chawanmushi course is one that we always look forward to at any omakase, and Mizuki’s rendition of the comforting dish definitely didn’t disappoint. While it’s common to see chawanmushi made with various vegetables and seafood, it’s pretty rare to see a beef chawanmushi that’s topped with diced wagyu like what Mizuki has done. The Chawanmushi with Diced Wagyu was extra umami thanks to the addition of beef, and we absolutely enjoyed every silky bite. Then we were served a mid-course rice bowl that’s topped with more wagyu tartare, shiro ebi (baby white shrimp), ikura and caviar; and we liked how this was much more savoury than the usual chirashi rice bowls.

Assorted Tempura

One of the highlights of the course is undoubtedly the Wagyu Sirloin Shabu Shabu: where we got to see the dashi broth made from scratch using bonito flakes. The thin, marbled slices of A5 wagyu beef are then “swiped” through the simmering broth for barely 2 seconds before being served. This dish is definitely a delight for beef lovers, and we got to savour the natural tenderness and beefy flavour of the wagyu. Then comes the Assorted Tempura course, where we got to enjoy lightly battered crispy tempura of Prawn, Seaweed-wrapped Enoki, Green-eyed Fish, Lotus Root, Eggplant and Maitake Mushroom.

Grilled Tenderloin Steak

Wagyu Donabe

The entire course ends on a high with none other than steak, featuring a Grilled A5 Tenderloin served with a creamy potato purée. The steak was seared to a medium doneness, and while we felt that it could’ve been just a tad more rare, the beef was still sufficiently tender and juicy. Our only other gripe with this dish was that we wish there was more of the steak. If you’re still not full after all that, not to worry: the Wagyu Donabe is sure to take care of that, and is definitely a hearty end to the course, filled with generous chunks of wagyu beef in every bite.

Homemade Ice Cream

While the price point for the Wagyu Omakase might be a little steep, we think it’s worth the price for special occasions, especially for the quality and quantity of A5 wagyu you’re getting. 5 out of 8 of the courses in the omakase include wagyu, and we weren’t left hungry by the end of it. So if you’re looking to enjoy a satisfying omakase that’s unlike your usual sushi and seafood-centric courses, Mizuki is surely the place to consider to treat yourself or a fellow beef lover.
