One of 2021’s most highly anticipated restaurants is finally opening its doors for the first time on 1 July. Bringing Singaporeans a taste of Korea, the all-new Nae:um restaurant, head by the former chef of Kimme, Chef Louis Han, presents a contemporary take on traditional Seoul cuisine, inspired by his heritage and time working in kitchens across the globe.

Serving up an episodic menu based on Chef Louis Han’s favourite ingredients, the Nae:um restaurant’s very first selection is set to showcase a variety of snacks in the form of the Bugak, featuring thin slices of crown daisy and lotus root coated with glutinous rice paste, which were dehydrated before being deep-fried into crispy savoury chips that break gently, and are galvanized by a dusting of paprika kimchi powder, the Nurungji Beef Tartare which features fresh raw beef marinated with bulgogi sauce and lime juice, atop a crispy puffed handmade scorched brown rice cracker, with a cured egg yolk, and a Korean-style meatball known as the Duck Galbi Tart which features hand-chopped duck meat and fats, marinated with Naeu:um’s own blend of gochujang sauce.
Other offerings include the Mulhwae; a combination of kampachi, cuttlefish, and yuzu chilli, the Uni Somyeon consisting of buckwheat and kimchi with a choice of additional caviar, the Jjim which features a red grouper and spanner crab served with zucchini, the Nuruk-Aged Wagyu Striploin served with shiitake mushrooms and kohlrabi, the Summer Bingsu served with makgeolli, mascarpone, and fermented fruits, and the Charcoal Jujube which showcases multigrain, jujube ice cream with a yakgwa fermented rice cake, alongside a surprise $148+ five course dinner menu.
Set within an opulent space with predominantly wood furnishing, the all-new Nae:um restaurant will feature a bar table, a variety of other seating arrangements, ornamental displays, and an open-concept kitchen area where guests will be granted the opportunity to watch Chef Han in action whilst awaiting their meals.
