5. Truffle Ice Cream

IG: @justinfoodprints

This Black Truffle Ice Cream & 20 Year Mirin from Small’s is an ice cream experience you’ve never seen before: the 20 Year Mirin ice cream is placed on the palm of your hand, and black winter truffle is shaved directly on your hand. You then pop the entire thing in your mouth, licking up the stray truffle shavings—a little crass but totally worth it for the flavour explosion that follows.

The Black Truffle Ice Cream & 20 Year Mirin is not available as a la carte, and it’s part of Small’s Bread x Sushi ($180) omakase menu. The brainchild of Chef Bjorn Shen, the Bread x Sushi explores sushi in a very different way than we’re used to: utilising bread as a base instead of the usual rice. For the full doughmakase menu, see here
