[SHOUT REVIEWS] DECADENT A5 JAPANESE WAGYU SANDO SPECIALTY STORE WITH IN-HOUSE BUTCHERY OFFERING RARE NOSE-TO-TAIL BEEF CUTS!

It’s rare enough to find a restaurant that specialises in only sando, much less a shop that has both a sando concept and in-house butchery all in one—but the new Gyu San does exactly that. Gyu San is the new kid on the block in the bustling Tanjong Pagar district: a Japanese joint serving up decadent A5 wagyu sandos with a butchery where you can buy various rare and unique cuts of Japanese wagyu beef.

If you have a taste for unique cuts of Japanese wagyu, the in-house butchery is where you should go. Gyu San is very much a nose-to-tail butchery: they get their meat from whole cows, and offers over 55 premium Japanese wagyu cuts sourced directly from various prefectures in Japan. Every part of the cow is utilised and offered for purchase over-the-counter—save for the tongue—from prime cuts like striploin, tenderloin and ribeye; to secondary cuts like tri-tip, oyster blade and more, even the beef fat is available if you want it! 

What’s special about Gyu San’s one-of-a-kind butchery is also the fact that they offer some of the most exclusive and select Japanese wagyu for purchase over-the-counter that you won’t find anywhere else. Gyu San offers only the finest Japanese wagyu, with nothing under the A4 grade: such as Kamichiku Satsuma Gyu, Kanzaki Gyu and Hida Gyu. Out of the three types of wagyu, the Kamichiku Satsuma Gyu is definitely the highlight; winner of Japan’s most prestigious Wagyu Olympics, only the top 4% of Kamichiku Satsuma Gyu from Kagoshima is brought in to Gyu San for use in all its wagyu sandos. 

Gyu San boasts some of the most decadent, top-grade Japanese wagyu fat-fried sandos and sides, along with other sando options like fruit, tamagoyaki and ebi. All of Gyu San’s sandos use premium crustless shokupan bread that’s been toasted to crisp golden-brown perfection. 

A5 Gyu San Katsu Sando, $32

A5 Striploin Sando, $48

Our favourite out of the sandos has got to be the A5 Gyu San Katsu Sando ($32), made with a thick serving of luxurious A5 Kamichiku Satsuma Gyu House Cut. The beef used has been sukiyaki-ed instead of being a whole slab of meat, giving you a tender, beefy texture that’s just about melt-in-your-mouth. If you prefer meat that has more bite, go for the A5 Striploin Sando ($48); served at the ideal medium-rare, you can definitely savour the tenderness of the beef to the fullest. 

Ebi Katsu Sando, $28

Tamagoyaki Katsu Sando, $18

The Ebi Katsu Sando ($28) is a fresh change if you’re more into seafood, with plump minced shrimp that’s been battered and slathered with a lively housemade tartar sauce that’s reminiscent of a leveled up McDonald’s Filet-O-Fish tartar sauce. The Tamagoyaki Katsu Sando ($18) is also an easy option if you’re not feeling like having such a heavy sando. The airy and fluffy omelette is made with Japanese eggs, giving you a gorgeous bright yellow eggy shade. 

A5 Yakiniku Salad, $18

A must-order for sharing is definitely the crowd favourite Wagyu Chips ($8), thin russet potato slices fried to crispy-crunchy perfection in top-grade Japanese wagyu fat and sprinkled with Gyu San’s very own furikake—we could not stop reaching for more of this.
