You Can Now Have Pizza Omakase at Singapore’s Smallest Restaurant

Size matters — except at Small’s, a four-seater restaurant in Singapore that serves pizza omakase style. Helmed by local chef and Masterchef Singapore judge Bjorn Shen, this six-foot-wide establishment is located at a bar counter within Shen’s popular flagship store, Artichoke.

Like any other omakase, Shen will curate items that change on a rotational basis. Expect the unexpected — what you can look forward to, however, are a total of 10-12 dishes consisting of a few starters, a bunch of pizzas in various forms and desserts.

The menu is inspired by pizza joints from the ‘80s and ‘90s like Shakey’s and Pizza Hut. Shen, however, puts a modern and elevated spin on nostalgic pizza essentials like garlic bread, hot wings, meatballs, stuffed crusts, and cookies. Love garlic bread? Experience it in Shen’s unique version: pizza aglio olio. Or if it tickles your fancy, there’s the pizza banh mi made from pizza dough filled with lemongrass-rubbed Kurobuta pork steak, Vietnamese mortadella, pickles and herbs.

And because Small’s only sees 12 customers a week (three omakase sessions a week, four customers each time), there will be no room (no pun intended) for rested overnight dough like in large commercial restaurants. Instead, expect a high-hydration Neapolitan-style dough that’s aged for a minimum of four days for flavour development.

Bookings for each month open on the 24th of the previous month. Currently, all slots for February have been taken up — that’s how fast you have to act once slots are released! Prices range around $500++ for a group of four.
