There’s been plenty of new private dining experiences in Singapore, but have you ever come across one that’s priced below $100 per person? We found a new, intimate private dining experience in a HDB that offers a hearty 5-course dinner for just $89 nett per person, inclusive of seafood dishes, meat and even complimentary sake.


Enter Bryan’s: a cosy private dining spot located in Sembawang, boasting intimate and moody vintage-inspired oriental decor. The dining space is dimly lit with vintage lamps, Asian-themed artworks and furnishings; and looks especially moody when night falls. The decor mirrors Bryan’s menu and concept, which is Japanese-Chinese fusion cuisine created with a modern flair.


Amberjack
What’s most attractive about Bryan’s is definitely the price point: just $89 nett per person for 5 courses, which is probably unheard of in the private dining scene, and is likely one of the most affordable private dining courses you’ll find so far. Even with the accessible price point, you’re still getting value: as the course includes seafood, meat and even some booze. The dinner course starts with some warm Hakutsuru sake to open up your palate, before the first cold appetiser of Amberjack is served. What really makes the dish is the delightfully tangy passionfruit vinaigrette that’s paired with the sashimi, making it a refreshing start to the dinner.


Salmon




Duck
Then you have a second starter, a warm one this time: Salmon tartare that’s done with a Chinese twist. There’s a whole lot of flavours and textures at play here: citrusy tartness, crisp vegetables, aromatic spiciness and more. The salmon is mixed with a homemade Chinese chilli jam and 10-year aged Shao Xing beurre blanc; it’s got a spicy kick and an addictive crunchy texture thanks to the freshly-toasted brioche it sits on. Next comes the first main course: a crispy Duck dish made with 48-hour aged duck that’s been slowly pan-fried until you get that glistening crust on the skin. The duck has also been spiced with a Chinese 5-spice and drizzled with a homemade juniper berry hoisin sauce. Aside from the duck itself, what actually stood out for us is the side of crispy hasselback potatoes. The hasselback is thrice-cooked for maximum crunch, and sprinkled with a house-made BBQ seasoning powder; and we just love the combination of crunchiness outside and fluffy insides.



Snapper


Bananas

The final main dish is a Snapper fillet, served skin-on on a bed of mala-esque buckwheat noodles. The skin of the snapper fish is basted in hot oil until the scales are blistered and crispy, so you get both the crunch from the skin and the softness of the fish itself in one bite. As for the buckwheat soba noodles below, it’s tossed in a homemade salsa verde made with Chinese peppercorn oil—very similar to the numbing spice of mala, without being too overpowering. For dessert, you get to finish on a sweet note with whisky-spiked Bananas: ripe bananas are flambéd in whisky and caramelised with brown sugar, before being topped on a scoop of caramelised banana ice cream and sesame crumbles. Our only gripe with this dessert is that it might be just a tad too sweet, and we would’ve preferred if there was a more refreshing or sour dessert to end the course. Before the dinner course ends, you’ll also be served some hot red date cinnamon oolong tea to soothe the stomach and aid digestion.


What we like about dining at Bryan’s is that everyone gets to enjoy a truly private dining experience: no matter your group size, you’ll always have the entire space booked out for your party—no sharing with other guests. As long as you have a group of at least 2 persons, Bryan will reserve the whole space for you, making this a great option for intimate dates or private parties. As for the dinner itself, even though it was only 5 courses (compared to most other private dinings that have at least 10 courses), portions were pretty generous and we didn’t leave hungry. While the presentation of dishes might not have the most finesse, the flavours are well executed and balanced; plus at just $89 nett per person, we’d say you’re already getting pretty good value for a private dining experience. Would we be back? For sure, especially to try out more of what Bryan’s has to offer, and especially if we’re looking for a private space to enjoy good food and even better conversation.
