5-Minute Thai Banana Nutella Pancake Recipe!

Roti Gluay, also known as, Thai Banana Pancake is a popular street food dish in Thailand and a great option for spicing up your breakfast! While there are several recipes online to make this scrumptious dish, this technique promises swift preparation whilst maintaining the delicate and sweet flavours of the authentic dish! 

To recreate a Thai Banana Pancake at home, you will need –

1 piece of frozen roti paratha

1 banana

2 Tbsp Nutella

1 Tbsp unsalted butter

1 Tbsp sugar

1 Tbsp condensed milk

Begin by defrosting your roti paratha for at least 5 minutes, as you prepare to gently stretch bread by its edges to create a bigger base. Once satisfied with the circumference of your bread, cut a banana into 12 slices and arrange them at the center of your paratha.

Fold the corners of the paratha inwards to cover the majority of the banana slices and begin preheating a pan with unsalted butter. As the butter melts, place the paratha into the pan and allow it to sizzle until hints of brown begin to appear.

Once the bottom of the bread is evenly cooked into a light shade of brown, sprinkle sugar over the top and flip your dish over. Keep flipping the dish back and forth until both sides are golden brown, before taking the pan off heat. This step should take an estimated 4 to 5 minutes to complete. As the paratha cools, spread a layer of Nutella with a small dose of condensed milk over it, and you are ready to eat!
