With most bubble tea shops remaining closed in the first phase of Singapore’s re-opening after the circuit breaker, Shangri-La Hotel, Singapore’s team of pastry chefs has created their rendition of the coveted beverage in the form of a Bubble Tea Lava Cake.
Layers of Earl Grey Japanese sponge cake sandwich 64% Manjari chocolate-infused tea ganache to form the familiar fragrant flavours of milk tea. The cake is topped generously with mascarpone cheese chantilly cream which emulates the smooth mouthfeel of the beverage. Evidently, a copious amount of chewy gula melaka pearls complete the bubble tea-inspired delight.
The Bubble Tea Lava Cake is available in 3 sizes at the following prices from now till further notice:

• 350 grams ($38 nett)
• Mini size ($9 nett)
