Situated along the residences of Petain Road is OLLELLA, a new pastry cafe specialising in modern French choux pastry and traditional Indonesian kue.
Derived from the names of the two Indonesian sisters and co-founders Ollyvia and Marcella Putri, OLLELLA features two sub-brands Chouquette by OLLELLA as well as Gula by OLLELLA. At only 24 years old, pastry chef Ollyvia has had the experiences of working under world renowned pastry chefs including Sebastien Canonne, Jacque Pfeiffer and En Ming Hsu.
Chouquette by OLLELLA offers a range of choux pastry, a light pastry dough made of butter, water, flour and eggs. With seven decadent flavours to choose from, the assortment of pastries is not only dainty and beautiful, but indulgent as well.
Regular Choux (SGD $4 and $5 each)
The seven flavours in the range include: vanilla, apple cinnamon, raspberry, lemon meringue, matcha with azuki, tiramisu, and dark chocolate, and are each priced between SGD $4 to $5 for a 5cm choux.
Mini Choux Platter Set (SGD $21)
One can also opt for the mini choux platter set (SGD $21) which includes mini 3cm-sized choux of every flavour.
Chouquette (SGD $3 for 60g)
Available at SGD $3 for 60g, these 2cm-sized chouquettes from OLLELLA are topped with some pearl sugar and crushed almonds, giving it a slightly crunchy texture. With a light and sweet taste, these chouquettes make for a good afternoon snack.
Kue Lapis Legit (SGD $1.50 per slice)
Gula by OLLELLA, a homage paid by the sisters to their grandmother who makes traditional Indonesian cakes, offers a range of traditional kue including the Kue Lapis Legit. The intricately-made 20 layer cake is made using a secret blend of lapis spice and tastes unlike any other kue lapis in the local market, for this has a stronger spice fragrance and a smooth buttery texture. The cake is available for pre-order and is priced at $38 for 600 grams and $72 for 1.2 Kilograms, with the cafe also offering individual slices in-store every Wednesday.
In collaboration with OLLELLA are The Pourover Bar as well as A.Muse Projects, which offers a selection of coffee and tea respectively. The Pourover Bar carries a comprehensive selection of specialty coffee beans, and uses different methods of coffee extraction such as Kalita and Cold Drip to produce quality coffee in each cup. A.Muse Projects is a local specialty tea company offering a range of handcrafted tea blends inspired by the beauty and subtle elegance of tea.
Cold Drip and Cold Brew with Milk (SGD $9 each)
The Bouquet (SGD $4.50)
The caffeine-free floral rose tea is brewed by pouring heated water over the tea leaves and left to steep for 3 minutes. The result is a light, fragrant tea with floral notes and a sweet aroma – which goes along perfectly with the choux pastry from OLLELLA.
